The gluten-free diet (GFD) remains the cornerstone treatment for celiac disease, by allowing the gradual disappearance of symptoms and serum antibodies, and the normalization of the intestinal histological architecture. This dietary treatment is required in other gluten-related disorders, particularly non celiac gluten sensitivity. Given the newly discovered fields of applicability of this therapy, it is important to increase the awareness of health professionals about GFD indications and modality.
