Non celiac gluten sensitivity is characterized by symptoms triggered by gluten, alleviated by gluten withdrawal. Giventhe absence of a biomarker, the prevalence is difficult to estimate, and the diagnosis should be performed with double blind placebo controlled gluten challenge. The presentation is various and seems to have common points with irritable bowel syndrome. The involvement of innate immunity has been supposed, but other mechanisms (motility disorders, visceral sensitivity) could be involved.
