Nutrition, genetics and human evolution: a never-ending story

The theory of genetic-cultural coevolution focuses on the evolutionary phenomena driven from the interactions between genetic and cultural transmission systems. Fascinating examples can be identified in the evolution of human nutrition. We will describe two different situations, both developed following the greatest revolution of all time, the introduction of agriculture and animal breeding: the persistence of human lactase and the evolutionary celiac paradox.
